From the kitchen of Chef Shawn - Partners Pantry Catering - just a few that I have gathered over the years. Oven Dried Chips 1 teaspoon sea salt 1 teaspoon chili powder ½ teaspoon cumin ½ teaspoon coriander ½ teaspoon black pepper ¼ teaspoon 1 lbs. Root Vegetables 1 Tablespoon olive oil 1) Preheat oven to 250 degrees 2) Combine Salt and Spices in mixing bowl 3) Slice Root Vegetables into paper thin slices and toss lightly with oil, next toss in spice mixture. Arrange on baking sheets that have been covered with parchment paper. 4) Bake for 2 hours, turn oven off and let vegetables dry for 2 hours or overnight. Pumpkin Pie Wontons 1 Cup canned Pumpkin 2 Tablespoons Maple Syrup 3 Tablespoons brown sugar 1 teaspoons pumpkin pie spice 1 package wonton wrappers 1 cup water Granulated sugar for dusting Ground cinnamon for dusting 1) Preheat oven to 400 degrees. In medium bowl, mix pumpkin, maple syrup, brown sugar and pumpkin pie spices 2) Place one wonton wrapper flat on work surface. Spoon 1 tablespoon filling into center. Moisten edges of wonton with water and fold in half to form triangle. Press edges to seal. Repeat with remaining filling. 3) Arrange filled wontons on baking sheet with parchment paper. Lightly coat wontons with cooking spray and sprinkle with sugar and cinnamon. 4) Bake until golden, about 16 minutes. Turn and bake 2 additional minutes. Set baking sheet on wire rack to cool. Triple Chocolate Cake 1 18 oz. Chocolate cake Mix 1 4 oz pkg instant chocolate pudding 4 eggs ¾ cup sour cream ½ cup vegetable oil ½ cup water ¼ cup mayonnaise 1 Cup chocolate chips Unsweetened cocoa powder for dusting 1) Preheat oven to 350 degrees. 2) Grease bundt pan with cooking spray and dust with unsweetened cocoa. 3) Combine cake mix, pudding mix, eggs, sour cream, oil, water, mayonnaise into larger bowl or kitchen aid bowl. 4) Beat on medium speed until smooth, about 2 minutes. Stir in Chocolate chips. 5) Pour into prepared pan. 6) Bake until tester comes out clean (about 55- 60 Minutes). 7) Allow to rest for 1 minute before removing from pan Savory Palmiers 2 Tablespoons grated parmesan cheese 1 Package puff pastry 2 tablespoons prepared spread 1/8 teaspoon onion powder 1) Heat oven to 375 degrees. Place parchment paper on baking sheet and coat with cooking spray. 2) Sprinkle cutting board with parmesan cheese. Lay puff pastry on board and roll to about double in size. 3) Evenly coat pastry with prepared spread. 4) Roll each side into each other; make what the French call an elephant ear. 5) Slice and place on prepared cooking sheet. 6) Bake in preheat oven for 6- 12 minutes or until deep golden brown.
